Ingredients
250g Feta Cheese
50g Gruyere Cheese (grated)
2 eggs beaten lightly
2 tbsp fresh mint
8-10 sheets filo pastry
75g melted butter
Method
Pre-heat oven to 180 degrees C
Drain the liquid from the feta and crumble into a bowl
Add the grated gruyere, mint, eggs and butter to the feta and mix using a fork
unroll the filo pasty and layer two sheets together
