Ingredients
1 block of Feta Cheese
2 bunches of small tomatoes (baby plum or cherry)
Olive oil
A hand full of Basil
1 Garlic clove – crushed
Pasta
A bunch of spinach
Method
Pre heat the oven to 190 degrees C
Using an oven proof dish place the feta block in the middle of the dish and scatter the tomatoes around the feta. Drizzle with olive oil and and a handful of basil. Season with salt, pepper and crushed garlic.
Cook for 15-20 minutes in the oven, or until the tomatoes start to burst.
Cook the pasta as the packet describes and at the last minute add the spinach to wilt.
Drain the pasta and spinach and mix with the tomato and feta mix.
Serve with a garnish of basil leaves
