An old girlfriends father from Hong Kong showed me this method for cooking perfect rice
Add your rice to a saucepan and then rinse the rice three times under cold water to remove the starch.
Add double the amount of water to rice and then place onto a medium heat on the hob. Stir the rice a little every few minutes and wait for the water level to drop and the rice to start to pit. (like little volcanos)
Turn the heat down to a low heat. put the lid on and leave to cook for 10 minutes. Do not be tempted to lift the lid as that would stop the steaming process and the rice will not be as fluffy.
Test that there is steam being produced by spinning the lid. If it does not spin freely, increase the heat a little and try again
After 10 minutes take the rice of the heat and fluff up with a fork then serve.
